Bibingka (Filipino Rice Cake)
- 0.25 c Butter
- 1 c Brown sugar
- 1 can full-fat coconut milk
- 2 c sweet rice flour
- 0.5 tsp pink salt
- 2 tsp Baking powder
- 2 Eggs
- 1 tsp Vanilla extract
- Sesame seeds

Directions

Preparation of Wet Ingredients
1. Melt butter in a pot until the butter turns into golden brown.
2. Add in sugar and coconut milk and set aside to another bowl.
Preparation of Dry Ingredients
1. Whisk dry ingredients - flour, salt, and baking powder.
Combining Wet and Dry Ingredients
1. Add eggs and vanilla extract to the wet mixture. Whisk all together.
2. Combine wet and dry mixtures gradually until well combined.
Preparation for Baking
1. Add baking cups to a muffin tin and fill 3/4 of the cup so it doesn’t overflow.
2. Sprinkle sesame seeds.
Baking Process
1. Bake at 350 for about 45-50 minutes or until golden brown.
