Ingredients

- 4 tbsp Unsalted butter
- 0.5 c Hazelnuts, skinned
- 1.25 c all-purpose flour
- 0.75 c Granulated sugar, divided
- 1 tbsp Ground cinnamon
- 2 tsp Baking powder
- 0.25 tsp Salt
- 0.5 c Buttermilk
- 0.5 c mini chocolate chips
- Vegetable oil, for frying

Directions

Prepare the butter
1. Melt the butter over low heat in a small saucepan and continue to cook until browned bits have formed at the bottom.
2. Immediately transfer to a small dish and set aside to cool.
Prepare the hazelnuts
1. Toast the hazelnuts in a dry skillet over low heat, stirring often, until golden brown.
2. Transfer to a cutting board and coarsely chop.
3. Set aside.
Prepare the sugar mixture
1. In a shallow dish whisk together 1/2 cup sugar with 1 tablespoon cinnamon and set aside.
Prepare the oil
1. Fill a large pot with about 3 inches of oil.
2. Set over medium and heat until it reaches 355°F.
Prepare the doughnut mixture
1. In a large bowl, whisk together the flour, remaining 1/4 cup sugar, baking powder, and salt.
2. Stir in the buttermilk until just combined and then gently fold in the chocolate chips and hazelnuts.
3. Roll into balls about 1/2 tablespoon each and gently drop into the hot oil.
4. Do not over crowd.
5. Fry, stirring often, until golden brown, about 2 to 3 minutes.
6. Use a slotted spoon to transfer the doughnuts onto a plate lined with paper towels.
7. Allow the oil to reach the temperature again before continuing to fry the remaining doughnuts.
8. Roll the warm doughnuts in cinnamon sugar and enjoy!
