Ingredients

Main Dish
- 18 oz Broccoli
- 3 oz tofu, firm, crumbled
- 1 clove Garlic, finely chopped
- 1 Lime, juiced
- 2 jalapeños
- 1 c Cilantro leaves, save some for garnish
- 1 Red onion, finely diced, save some for garnish
- 1 tbsp Extra virgin olive oil
- 0.5 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste

Directions

Preparing the Broccoli
1. Destem the broccoli and break it into florets. (You can use the stem too, although it needs a longer cooking time.)
2. Boil for about 3-4 minutes until tender. You want it to be more on the soft side.
3. Plunge into ice water to retain the bright green color.
4. Drain well.
Blending the Ingredients
1. In a good-quality food processor or blender, combine the boiled broccoli, crumbled tofu, garlic, lime juice, cilantro, and salt.
2. Gradually stream in olive oil.
3. Blend until you have reached a creamy consistency.
4. Mix in most of the jalapeños and red onion.
Garnishing and Serving
1. Garnish with the rest of the cilantro leaves, red onion, and jalapeño peppers.
2. Season with cracked pepper and drizzle with olive oil.
3. Enjoy with tortilla chips.
