Tacos
- 8 non-gmo corn tacos
Tofu Scramble
- 12 oz silken tofu
- 1 Onion, finely diced
- 0.5 tsp kala namak (black salt)
- 0.75 tsp Turmeric
- 0.5 tsp cracked pepper
- 1 tbsp Olive oil
Serving
- 0.5 c pickled red onions
- 1 Avocado, sliced
- 0.25 c pickled jalapeños
- 0.5 Cilantro leaves
- 2 tbsp Sriracha chili mayonnaise

Directions

To make a delicious tofu scramble
1. Start by heating up some olive oil in a pan over medium-high heat.
2. Once it's hot, sauté the onions with kala namak until they become translucent.
3. Add the tofu block and turmeric to the pan and scramble it into smaller pieces.
4. Keep stirring until the tofu is evenly coated with turmeric and has an overall yellow color.
To prepare the corn tacos
1. Prepare the corn tacos according to package instructions.
2. Fill them with the tofu scramble and top with pickled red onions, sliced avocado, pickled jalapeños, and cilantro leaves.
3. For an extra kick of flavor, drizzle with Sriracha Chili Mayonnaise.
