- 1 lb Ground pork
- 4 Cloves medium garlic
- 2 tbsp light brown sugar
- 1.5 tbsp Sage
- 1.5 tbsp Thyme
- 1.5 tbsp Kosher salt
- 1 tsp Black pepper
- 0.5 tsp crushed red pepper
- 0.5 tsp poultry seasoning
- 0.5 tsp Smoked paprika
- 0.25 tsp Onion powder
- 1 tbsp Fennel seeds, optional

Directions

Preparing the Meat Mixture
1. Mix all ingredients together and add to 1 pound of your meat of choice. You can use ground pork, turkey, chicken, or vegan meat options.
2. Let meat marinate in fridge overnight or for at least 2 hours.
Forming and Cooking the Sausages
1. Use a medium sized ice cream scooper to make even scoops of the meat.
2. Layer the balls on parchment paper and flatten with a spatula.
3. Cook on the stove until browned on both sides and cooked all the way through the middle.
Optional Freezing Instructions
1. You also have the option to freeze uncooked sausages in between two layers of parchment paper for later use.
2. The sausages are good for up to 4 months in the freezer.
