Ingredients

- 4 bacon slices
- 1 sourdough baguette
- 4 tbsp Unsalted butter
- 2 clove Garlic, minced
- 0.5 tsp dried parsley
- 0.25 tsp crushed red pepper flakes
- 6 Large eggs
- Kosher salt
- coarse black pepper
- Hot sauce, a couple of dashes
- 0.5 c shredded potatoes
- 2 Scallions, thinly sliced
- 0.5 c shredded cheese
- Salsa, for serving

Directions

Prepare the bacon
1. Cook bacon until crispy, either in oven or in a skillet.
2. Allow to cool and then chop, set aside.
Prepare the baguette
1. Cut the very top off the baguette and scoop out most of the insides to create a bread boat.
2. Combine butter, garlic, parsley and red pepper flakes.
3. Brush the inside of the bread with the garlic butter and bake at 350F° for 10 minutes.
Prepare the egg mixture
1. Whisk together the eggs, a pinch of salt and pepper, and a couple dashes of hot sauce.
2. Set aside.
Assemble and bake
1. Sprinkle the inside of the bread boat with the potatoes, bacon, scallions, and add in the beaten eggs.
2. Place on a baking sheet and top with cheese.
3. Bake until the center is set, about 18 to 20 minutes.
4. Remove from the oven and top with more scallions and salsa or hot sauce.
5. Slice and enjoy.
