- 1 lb Chinese sausage
- 3 scallions
- 1 large jicama
- 10 eggs
- 1 pack Spring roll wrapper
- Hoisin sauce

Directions

Preparation of Chinese sausage and scallions
1. Boil your Chinese sausage in water for 5-10 minutes.
2. Drain and then thinly slice your Chinese sausage.
3. Slice your scallions.
4. Sauté your Chinese sausage for a few minutes and add your scallions.
5. Sauté and remove from heat.
Preparation of egg crepe
1. Mix your eggs and add just enough eggs to cover the bottom of a skillet. Note that we want this to be thin, like an egg crepe.
2. Cook the eggs for 2-3 minutes and flip over and cook for an additional 15-30 seconds.
3. Repeat steps until all the eggs have been cooked.
Preparation of jicama
1. Shred your jicama using the shred side of a grater or using a knife to cut it into thin slices.
2. Add your jicama to a steamer to steam for 15-20 minutes or until tender. Alternatively, you can add the jicama to a pan and sauté until tender.
Assembling the spring roll
1. To assemble, add sausage, jicama, and egg to the bottom of a lightly damped spring roll and wrap upwards, tucking in the sides.
2. Continue wrapping until sealed.
3. Enjoy with your homemade or store bought hoisin sauce.
