Ingredients

Blueberry Ginger Thyme Simple Syrup
- 16 oz blueberries
- 1 c water
- 0.75 c granulated cane sugar
- 2 inches fresh ginger
- 2 tbsp fresh thyme leaves
- 1 Lemon, juiced
For a SINGLE mocktail
- 6 oz Club soda, or seltzer water
- 2 oz blueberry ginger thyme simple syrup
- 0.5 c ice cubes
- fresh blueberries
- Fresh thyme, for garnish

Directions

For the Blueberry Ginger Thyme Simple Syrup
1. Combine all ingredients into a large saucepan over medium high heat.
2. Bring to a boil then simmer on medium low for 10 minutes.
3. After reducing the heat, mash the blueberries with a potato masher or fork.
4. Set aside to cool to be at least room temperature.
5. (Optional) Transfer the mixture to a food processor or blender to pulse 2-3 times.
6. Strain the mixture into a jar.
7. If desired, spoon some of the strained blueberry pulp into the simple syrup for extra flavor.
8. Store in a glass jar with lid for up to 1 week in the fridge!
For the Mocktails
1. In a shaker or mason jar, combine the simple syrup and ice cubes.
2. Shake to combine.
3. Top with the club soda and stir.
4. Garnish with fresh thyme, blueberries, and edible flowers to enjoy!
