Ingredients

- 6.5 cup Bread flour, sifted
- 3 cup Warm water, heated to105 degrees
- 3.25 tsp Active dry yeast
- 3 tsp Granulated sugar
- 1 Tbs Kosher salt
- 2 tsp Baking soda
- 1 cup Blueberries, fresh preferred
- 1 Egg, for egg Wash (1 tbsp water to 1 egg)

Directions

1. To a stand mixer or a large bowl, add the sifted flour and salt.
2. Mix until well combined.
3. Add the warm water, yeast, and sugar to a bowl and mix until fully combined.
4. Let it rest for 10 minutes.
5. Mash the blueberries until all of the blueberries are no longer whole.
6. Add the blueberries to the bowl.
7. If using a stand mixer, turn to medium speed, then slowly add in the yeast mixture until it forms a smooth ball of dough.
8. If using a large bowl, add yeast mixture a little at a time and knead the dough for about ten minutes until a smooth ball of dough is formed.
9. Place the dough in a greased bowl, then cover with plastic wrap and a damp cloth.
10. Place in a warm environment for two hours to rise.
11. (Pro-Tip)- Warm your oven at 200 degrees for about five minutes then turn the heat off.
12. Release some of the heat from the oven until it's warm, then place your bowl of dough to allow the best rise.
13. Once the dough has risen, divide into 12 equal pieces (or one piece per serving).
14. Roll each piece into a ball, tucking the dough under itself.
15. Use your thumb to place a hole in the center then rotate to form circles in the middle thus your bagel shape.
16. Once you have all of your pieces rolled, place them evenly on baking sheets lined with parchment paper.
17. Cover with damp towels and let rise for 30 minutes.
18. Preheat your oven to 425 degrees.
19. Boil a large pot of water.
20. Once it comes to a boil, add the baking soda and stir.
21. Add the bagels in not overcrowding the pot.
22. Cook the bagels in the water bath for 1 1/2 minutes per side, then back on the baking sheets.
23. Brush the bagels with egg wash and bake for 20-25 minutes until perfectly golden brown.
24. Serve and enjoy!
