Ingredients

Beef Chuck Roast
- 2 lbs beef chuck roast
- 4 guajillo chile peppers
- 6 Thai chili peppers
- 6 chili peppers
- 2 large tomatoes
- 1 White onion, chopped
- 1 garlic bulb
- 1 Ginger, thumb-sized
- 1 tbsp Whole black peppercorns
- 1 tbsp Cumin seeds
- 1 tbsp Dried oregano
- 1 tbsp Smoked paprika
- 1 tsp Ground cinnamon
- 1 tbsp Salt
- 2 tbsp Tomato paste
- 4 c beef broth
Tacos
- Corn tortillas
- shredded Monterey Jack cheese
- chopped onion
- chopped cilantro
- Lime wedges

Directions

Preparing the beef
1. Cut beef into chunks and season with salt, peppercorns, garlic powder, onion powder, and cayenne.
2. Soak dried peppers in hot water for 30 minutes.
3. Blend soaked peppers and spices into a smooth paste, adding water if needed.
4. In a large pot, heat oil and brown beef chunks.
5. Add blended sauce, beef broth, and tomato paste. Stir well.
6. Bring to a boil, then simmer covered for 3-4 hours until beef is tender.
7. Remove beef and shred with forks. Set aside.
Preparing the tortilla
1. Preheat skillet. Dip tortilla in birria broth and place in skillet.
2. Add cheese, shredded beef, onions, and cilantro to tortilla.
3. Serve warm with strained broth for dipping. Garnish with more onions and cilantro.
