Ingredients

For the patties
- 1 Onion, diced
- 2 clove Garlic, diced
- 3 c white beans
- 2 red beets
- 0.75 c Quinoa, boiled
- 0.5 c Breadcrumbs
- 0.5 tbsp psyllium husk powder
- 2 tsp smoky spice or taco seasoning
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 2 tbsp Olive oil
For serving
- 5 burger buns
- 5 tbsp vegan mayonnaise
- 5 tbsp Ketchup
- 5 lettuce leaves
- 2 Tomatoes, sliced
- 1 c pickles

Directions

To make the burger patties
1. Start by sautéing diced onions in olive oil until they are translucent.
2. Add garlic and roast for another minute.
3. Then add the boiled beetroot, white beans, and spices.
4. Roast for another minute, then transfer the mixture to a food processor and pulse a few times to get a chunky texture.
5. Add boiled quinoa, breadcrumbs, and psyllium husk powder to the mixture and mix well until you have a smooth, firm dough.
6. If the dough is too sticky, add a few more breadcrumbs or psyllium husk powder.
7. Shape the dough into burger patties and brush them with olive oil.
8. Bake in the oven at 350 F for 25 minutes.
9. Let them cool slightly to firm up before assembling your burger.
To serve the burger
1. You can serve the burger with vegan mayonnaise, lettuce, tomato, pickled cucumber, pickled red onion, and ketchup.
