- 1 medium beet
- 1 15-ounce can Chickpeas, rinsed and drained
- 2 tbsp Lemon juice
- 2 tbsp Tahini
- 2 clove Garlic
- 0.5 tsp Salt
- 3 ice cubes
- Extra virgin olive oil, for serving
- Arabic style pita chips

Directions

Instructions
1. Peel the roasted beet and place in the food processor and process to roughly chop the beets.
2. Add the chickpeas, lemon juice, tahini, garlic, salt and ice cubes. Blend until the mixture is smooth with a bright pink color, 3- 5 minutes.
3. Serve at room temperature or cold with naan or your favorite dippers.
Additional Tips
1. If you like hummus, try adding beets next time you make some. I blended chickpeas, roasted beets lemon juice, ice cubes, tahini, garlic and salt. The ice cubes give it an ice cream-like texture and the color makes it extra fun for kids.
