- 2 lbs Sirloin steak
- 2 tbsp EVOO
- Kosher salt, to taste
- Pepper, to taste
- Ground mustard
- 2 Onions, sliced
- 5 Carrots, sliced
- 6 Celery, diced
- 4 clove Garlic, crushed
- 6 Yellow Potatoes, cubed
- 4 c beef broth
- 1 tbsp Better than bouillon beef base
- 1 tbsp Italian seasonings
- 1 tbsp Porcini powder
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 1.5 tsp celery salt
- 1.5 tbsp Cornstarch
- 0.25 c water

Directions

Seasoning the Sirloin Steak
1. Season your sirloin steak with salt, pepper, and ground mustard.
Preparing the Pot
1. In a Dutch oven or a large stock pot, add extra virgin olive oil.
2. Heat to medium-high heat.
3. Add in your sirloin once the pot is hot.
4. Sear your meat on both sides until brown, then remove from the pot and set aside.
Adding Vegetables and Seasonings
1. To the same pot, add a little bit more oil.
2. Then add in your onions and celery.
3. Cook down your onions and celery for 2 to 3 minutes and then add in your seasonings.
4. Once your seasonings are mixed in, add in your garlic last.
Adding the Sirloin and Broth
1. Once your garlic is fragrant, add back in your sirloin, beef broth, and bouillon base.
2. Stir and let simmer for 30 to 45 minutes.
Adding Carrots and Potatoes
1. After it has stewed for about 45 minutes, add in your carrots and potatoes for the last portion of cooking.
2. Cover and let simmer for another 30 minutes until potatoes are tender.
Tasting and Adjusting Seasonings
1. Taste your liquid.
2. Add in celery, salt, or anything else that you feel is necessary at this point.
Finishing the Stew
1. Once your potatoes are tender and your meat is nice and tender, your stew is ready.
2. Enjoy!
