Main Dish
- 1 lbs Ground beef
- 1 Onion, diced
- 1 green pepper
- 1 can kidney beans
- 1 can tomato soup
- 1 large can diced tomatoes, with juice
- 2 tbsp taco seasoning
- 1 tsp Brown sugar, or any sweetener of choice
- 2 clove Garlic, minced
- 2 celery sticks
- 1 small can mushroom pieces
- Sour cream, as topping (optional)
- shredded cheddar cheese, as topping (optional)

Directions

Browning the ground beef
1. In a large frying pan over medium heat, brown the ground beef until no longer pink.
2. Place in a large pot and do not drain.
Sautéing the vegetables
1. In the same frying pan used for the ground beef, sauté the onion, celery, and green pepper.
2. Cook for about 5 minutes until the onion is translucent.
Combining and simmering the ingredients
1. Add the sautéed veggies, kidney beans, mushroom pieces, tomato soup, and tomatoes with the liquid to the ground beef along with the seasonings, sugar, and garlic.
2. Stir all the ingredients well.
3. Cover and simmer for one hour, stirring occasionally.
4. Remove cover and simmer for 30 minutes or more, stirring occasionally.
5. Taste and add more seasonings if desired.
Serving the dish
1. Enjoy topped with sour cream and shredded cheddar cheese. Yum!
