- 1.5 pounds Ground beef
- 4 tbsp Olive oil
- 1 large Red Onion
- 2 Carrots, Peeled and Diced
- 4 Celery stalks, Diced
- 5 cloves Garlic, Finely Chopped
- 1 tsp dry Basil
- 1 tsp dry Oregano
- 1 tsp Black pepper
- 2 tsp sea salt
- 6 ounces Tomato paste, (1 small can)
- 0.5 cup water
- 2 cups beef stock
- 1 cup Milk
- 1 pound Pappardelle pasta
- 0.25 cup Parmigiana Reggiano
- Fresh basil, for garnish

Directions

Preparation of Vegetables and Meat
1. In a pot, add olive oil.
2. Once it’s hot, put in all the chopped veggies.
3. Sauté it for 5 minutes and then add chopped garlic.
4. Cook it for an additional couple of minutes before adding in the ground beef.
5. Break it apart and cook until it changes color.
6. Once it’s brown, add basil, thyme, salt, and pepper.
7. Mix well and then add the tomato paste.
8. Combine and then add the water and the beef stock (or any stock you have on hand).
9. Cook it for 40 minutes.
10. Keep mixing in between and once all the veggies are well combined, the basil goes in.
Finalizing the Sauce and Pasta
1. Once the consistency is thick and looks like a meat sauce, add milk.
2. Cook it on high heat for 5 more minutes.
3. Now add the boiled pasta with tongs and mix it until every “spaghetto” is coated.
4. Freshly grated cheese and basil goes on a plated bolognese.
5. Enjoy!
