Ingredients

Milkfish Belly
- 2 pcs Milkfish belly
- 0.5 White onion, rounds
- 1 Shallot, rounds
- 1 tbsp Garlic, minced
- 0.5 c lemon lime soda
- 0.5 c Soy sauce
- 2 tbsp calamansi juice
- 1 tbsp white miso paste
- Salt, to taste
- Pepper, to taste
- 1 Lime, rind, as needed

Directions

Preparation
1. Cut the onions, shallots and garlic, and set aside.
2. Keep the onion rings together because it will be easier to fry.
3. Dry the milkfish belly thoroughly, then season both sides with salt and pepper.
4. Cut each belly into 4 pieces.
Cooking the Fish
1. Add oil to a pan and sear the fish belly on both sides.
2. Do in batches if necessary.
3. Set aside.
Browning the Onions
1. In the same pan, brown the onions on both sides.
2. Keeping them together will make it easier to flip.
3. No worries, if they fall apart a little bit.
Sautéing the Ingredients
1. Once again in the same pan, sauté the garlic until it gets slightly toasted.
2. Add the shallots, and sauté for about a minute.
3. Add the soda, soy sauce, miso paste, calamansi juice.
4. Once it comes to a boil, gently add all the fish belly back in.
5. Let it simmer for 5-8 minutes.
Plating and Serving
1. Plate the fish with some sauce and the onions on top.
2. Using a microplane, freshly grate lime rind on top of the dish.
3. Serve warm.
