Ingredients

Banana Bread
- 3 overripe bananas
- 1.5 c Rice flour
- 0.5 c Sugar
- 4 oz brown butter
- 0.5 c Milk
- 2 Eggs
- 1 tsp vanilla paste
- 1 tsp Baking powder
- 0.5 tsp Salt
- banana leaves
- salted duck egg
- Shredded coconut, as needed, optional

Directions

To make the brown butter
1. Melt the butter in a small pot or pan.
2. Once the butter is melted, continue to cook until you notice tiny bubbles.
3. Once the bubbles subside, and the butter smells “nutty”, turn off the heat and take off the stovetop to prevent from burning.
To make the batter
1. In a bowl, add the sugar, bananas, and eggs.
2. Blend together using a hand mixer.
3. Then add the milk, salt, baking powder, vanilla paste, and rice flour.
4. Mix well until all the ingredients are properly combined.
To prep the banana leaves
1. Cut the banana leaves to the proper size.
2. Wipe it down with a damp paper towel.
3. Lightly heat up the leaf over an open flame to make it pliable.
To bake the cake
1. Line the 9x5 loaf pan with the banana leaf.
2. Pour the batter in.
3. Bake in a preheated 350F degree oven for 55-60 minutes.
To serve the cake
1. Once baked, let it cool for about 10 minutes before removing it from the pan.
2. Best served warm by itself, or with toppings like salted duck egg and shredded coconut.
