Ingredients

For the Dressing
- 1 tbsp Traditional Balsamic Vinegar
- 1 tbsp Olive oil
- 1 Lemon, juiced
- 1 tsp Dijon mustard
- 1 tsp Italian Dried Herbs
- Salt, to taste
- Black pepper, to taste
For the Orzo Salad
- 2 cups Orzo
- 4 cups Arugula
- 0.333 cup Feta cheese, crumbled
- 0.25 cup Fresh basil, chopped
- 0.5 cup Cherry tomatoes, halved or quartered
- 0.25 Red onion, chopped or thinly sliced
- 1 English cucumber, peeled and chopped

Directions

To Make the Dressing:
1. Mix all dressing ingredients together until smooth.
2. Season with salt and black pepper to taste.
3. Set aside.
To Make the Orzo:
1. Cook the orzo according to package directions.
2. Rinse with cold water and toss in 1 tablespoon olive oil to keep it from sticking together.
3. Set aside to cool to room temperature.
To Assemble the Salad:
1. In a large 1-liter jar or 4 smaller glass jars, divide out the sliced cherry tomatoes.
2. Pour the balsamic dressing over the cherry tomatoes.
3. Add a layer of red onions, then cucumbers.
4. Add the freshly chopped basil, then crumbled feta.
5. Add the cooked and cooled orzo pasta.
6. Lastly, add a layer of fresh arugula.
7. Seal with an airtight container lid and store in the fridge until ready to serve.
8. Enjoy!
