Ingredients

Egg Wash
- 1 Egg
- 1 tsp Mustard
Hotdogs
- 4 hot dogs
- 8 slices Bacon, thick cut, chopped
- 4 Tbsp plain cream cheese
- 1 White onion, sliced
- Yellow Mustard, to taste
- everything bagel seasoning

Directions

1. Whisk together your mustard and egg to create an egg wash.
2. Brush the exterior of the bagels with the mixture, then sprinkle with everything bagel seasoning.
3. Cook your chopped bacon (preferably with a cast iron skillet) until rendered down and a little crispy.
4. Once the bacon is done, remove from the pan and add in the sliced onions to caramelize in the bacon fat.
5. Cook on the grill or in the oven at 375° F for about 15 minutes, until they're golden brown with a nice crunch. I recommend rotating them every couple of minutes for an even cook.
6. Note: I cooked everything on the Bullseye grill! The hickory pellets provided an awesome wood-fired flavor and the Recteq controls the temperatures perfectly.
7. Top with plain cream cheese, bacon, caramelized onions, and mustard (or other condiments of your choice).
