- 1 Tablespoon Neutral Cooking Oil
- 10 ounces Beef Bacon
- 1 Tablespoon Unsalted butter
- 1.5 Pounds Russet potatoes, peeled & cubed into ½ inch pieces
- 0.5 Medium Yellow onion, diced
- 1 Teaspoon Kosher salt, or to taste for potatoes
- 0.5 Teaspoon Black pepper, or taste for potatoes
- 1 Teaspoon Garlic powder, for potatoes
- 1 Teaspoon Smoked paprika, for potatoes
- 8 Large Eggs
- 0.5 Cup Heavy cream, optional
- 4 oz shredded cheddar cheese
- 4 oz Shredded Mozzarella Cheese
- 6 Medium Flour Tortilla
- 1 Tablespoon Neutral oil, for tortillas

Directions

Preparing the Bacon and Potatoes
1. In a large skillet, preferably a cast iron skillet, heat to medium heat.
2. Add in a small amount of neutral cooking oil to the skillet.
3. Once the oil is hot, add in bacon.
4. Cook bacon until crispy, then remove from the skillet, set aside, and chop into pieces.
5. Leave about 2 tablespoons of bacon grease inside of the skillet and add in butter.
6. Once the butter is melted, add in peeled & cubed potatoes.
7. Mix potatoes in bacon grease and butter, then season with salt, black pepper, garlic powder, and smoked paprika.
8. Make sure potatoes are evenly placed in the skillet.
9. Cover the skillet with a lid and cook for 5 to 7 minutes or until the potatoes start to brown and develop a light crust on the bottom side.
10. Flip the potatoes over and toss in diced onions, diced red bell pepper, and diced green bell pepper.
11. Mix onions and bell peppers with the potatoes.
12. Add in a pinch of kosher salt.
13. Let potatoes cook for another 5 to 7 minutes or until they are fork tender; cook uncovered.
Preparing the Scrambled Eggs
1. Crack & add eggs to a bowl, then mix in heavy cream.
2. To a clean skillet on medium heat, add in 1 tablespoon of neutral cooking oil and 1 tablespoon of unsalted butter.
3. Once the butter is melted, add in eggs, scramble to desired consistency, and season with salt & black pepper to taste.
Forming and Cooking the Quesadillas
1. Form quesadillas by adding shredded cheese to one side and layering it with eggs, potatoes, chopped cooked bacon, and top with more cheese.
2. Fold tortilla over to close.
3. Repeat these steps for each quesadilla.
4. In a skillet on medium-low heat, add in 1 tablespoon of neutral oil.
5. Once the oil is hot, add in the tortilla and press down on top of it to ensure the bottom half of the tortilla is making contact with the skillet.
6. Cook each side of the tortilla for about 30 seconds to 1 minute or until both sides are golden brown.
7. Repeat these steps for each quesadilla.
