Ingredients

Turkey Mixture
- 3 lbs ground turkey
- 1 Onion, small, diced
- 1 dill pickle
- 1 c frozen peas and carrots
- 1 Egg
- 1 tbsp Oyster sauce
- 1 tbsp Cornstarch
- Salt, to taste
- Pepper, to taste
- turkey sausage
- Hard Boiled Eggs, as needed
- Cranberry sauce, as needed

Directions

Preparation of Vegetables
1. Cut and prep the onions and pickle.
2. Saute until the onions are slightly transparent.
3. Turn off the heat, and add the frozen peas and carrots.
4. The frozen peas and carrots help the mixture cool down faster.
Preparation of Meatloaf Mixture
1. In a bowl, combine the ground turkey, egg, cooled down sautéed vegetables, oyster sauce, cornstarch, salt, and pepper.
2. Mix thoroughly.
3. Fry a small piece of meat to taste and see if it needs more seasoning.
Forming and Baking the Meatloaf
1. Divide the ground turkey mixture into 4 equal parts.
2. Take one part and place on a lined baking sheet and spread to make the base of the meatloaf.
3. Cut the turkey sausage to fit the length of the meatloaf, and place slightly off center of the flattened piece.
4. Cut the hard boiled egg lengthwise into 1/4s and arrange next to the sausage.
5. Place another part of the ground meat on top, then form the meatloaf with your hands.
6. Repeat steps for the remainder of the ground turkey.
7. Bake in a preheat 375* F oven for 45 minutes, or when the internal temperature reaches 165*F.
Final Steps and Serving
1. Once cooked, brush some the cranberry sauce all over the embotido, and bake again for another 10 minutes.
2. Let the embotido cool down at least 10 minutes before slicing into it.
3. Serve warm with the cranberry sauce on the side.
