- 1 Red pepper, chopped
- 1 Red onion, chopped
- 2 c brussel sprouts
- 1 Yellow squash, large, sliced
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.5 tsp Oregano
- 1 tsp Salt
- 0.5 tsp Black pepper

Directions

1. Place all the vegetables, olive oil and seasoning together in a large bowl and toss well to combine.
2. Preheat the air fryer to 375°F.
3. Arrange a single layer of the vegetables in the air fryer basket.
4. Air fry for 10-15 minutes, shaking the air fryer basket once or twice during cooking to ensure even cooking.
5. Serve immediately with protein of choice.
