Ingredients

Doughnuts
- 3.5 cups all-purpose flour
- 2.5 teaspoons Baking powder
- 2 teaspoons Sugar
- 1 teaspoon Salt
- 1 teaspoon pumpkin pie spice
- 0.5 teaspoon Ground cinnamon
- 0.25 teaspoon Baking soda
- 1 cup Unsalted butter, cold, cubed
- 0.75 cup Buttermilk
- 0.5 cup Pumpkin Puree
- 1 teaspoon Vanilla extract
Topping
- 1 cup Granulated sugar
- 1 teaspoon pumpkin pie spice
- 0.5 teaspoon Ground cinnamon
- 0.25 cup Butter, melted

Directions

Prepare the Dough
1. Whisk together the flour, baking powder, sugar, salt, pumpkin pie spice, cinnamon and baking soda.
2. Cut in the butter with your fingers until it resembles coarse crumbs.
3. Stir together the buttermilk, pumpkin and vanilla.
4. Add to the dry ingredients and mix until a rough shaggy dough is formed.
5. Transfer to a lightly floured work surface.
6. Use your hands to lightly knead into a cohesive dough.
7. Roll out and then fold into thirds.
8. Roll once more and fold again.
9. Roll out into a rectangle about 1/2-inch thick.
10. Cut into 3-inch doughnuts and place on a baking sheet.
11. Chill for at least 30 minutes.
Air Fry the Doughnuts
1. Preheat air-fryer at 375°F for 10 minutes.
2. Then grease the inside basket and place in half of the doughnuts in a single layer.
3. Spray with cooking spray and then bake at 375°F for 10 minutes.
4. Carefully flip and continue to cook for another 6-8 minutes.
5. Transfer to a wire rack and continue air frying the rest.
Final Touches
1. Brush with melted butter and then roll around in the cinnamon pumpkin spice sugar.
2. Serve and enjoy.
