Ingredients

Carrot Mug Cake
- 3 tbsp Milk
- 1.5 tbsp Oil
- 0.5 tsp vanilla
- 4 tbsp All purpose flour
- 2 tbsp Sugar
- 0.333 tsp Baking powder
- 0.25 tsp Cinnamon
- 0.125 tsp Salt
- 0.25 c freshly grated carrots
Cream Cheese Frosting
- 1 tbsp Cream cheese, room temperature
- 1 tbsp Heavy cream
- 1 tbsp Powdered sugar

Directions

For the cake preparation
1. In a microwave safe mug (~10-12oz), add the milk, oil and vanilla, and whisk to combine.
2. Sift in the flour, sugar, baking powder, cinnamon and salt, and mix using a spoon or fork until the dry ingredients are fully mixed in.
3. Lastly, add in the grated carrots and mix until combined.
4. Microwave for ~60-90 seconds until the cake is cooked through (cooking time can vary; see notes).
5. Let the cake cool for ~15 minutes.
For the frosting preparation
1. Mix the cream cheese, heavy cream and powdered sugar until they form a creamy frosting.
2. Cover the cooled cake with the cream cheese frosting, serve and enjoy!
